Okay, so I just have to tell you this cake goes fast! Whenever I make it people always get excited when they see it sitting on the kitchen counter. I mean you can’t really go wrong by combining a cookie with a cake, can you?

I first came across this recipe from Baking Sense and it looked amazing! However, the recipe was to take 2 and a half hours and I just don’t have time to spend that much time baking a cake. Plus I needed to make it vegan.

Here is how I made this delicious 3 layer vegan cookie cake in less time.

Step 1: Bake the Cookie Layer

Head on over to Baking Sense and follow her directions for baking the cookie layer. You will need to sub out the butter with vegan butter, egg for a flaxseed egg, and the chocolate chips with vegan mini chocolate chips. Then let the cookie layer cool on a wire rake.

Step 2: Bake the Cake Layers

Now comes the easy part grab your Duncan Hines Butter Golden cake mix and bake according to the directions on the box. Again sub out the butter for vegan butter and the egg for a flaxseed egg. Be sure to add some vegan mini chocolate chips into the batter before placing it into the oven. Then let the cake cool on a wire rack.

Step 3: Layer and Frost the Cake

Start by placing the cake layer down first and then add Pillsbury Butter Cream Frosting on top. Yes, I know the name is Butter Cream, but it contains zero dairy and only uses soybeans. Next, slice the round top off of one of the cake layers making it flat and then place on top of the frosted cookie layer. Then frost the top. Again slice the other round top off of the second layer of cake and place on top of the frosted cake layer. Next, frost the top and sides of the cake. Lastly, sprinkle some mini chocolate chips on top of the cake as a fun finishing touch.

TIP: Add some food coloring to the inside layers of the frosting for a fun surprise. I made this cake for the 4th of July so I make the first layer blue, the middle layer red, and the outer coat white. The kids loved it!
